1 ( 5 lb)_ duckling, neck and giblets removed
Coarse salt and pepper to taste
3 garlic cloves, pressed
1 tablespoon 5- spice powder
1 orange, quartered
2 spring onion
2 tablespoon sherry
Garnish: chopped spring onions
- Wash and dry the duck two days before you plan to cook it. Sprinkle the duck with salt and pepper, and rub it with garlic and 5 spices powder, all over and inside.
- Leave the duck unwrapped in a refrigerator shelf to dry out and season- this will make the skin crispy. Let it come to room temperature before cooking.
- Preheat the oven to 190 deg C.
- Prick the duck all over with a wire brush- but just the fat; don't pierce the flesh. Put the quartered orange and spring onions (bent) in the cavity. Put the duck on a rack in a shallow roasting pan and roast for 1 hour and 15 minutes.
- About halfway through the cooking, pierce the skin at the joint where the leg and the breast meet on each side. Let the duck rest under tented foil for 20 minutes before carving.
- Pour of almost all of the fat from the drippings and add 2 tablespoons sherry to the drippings in the pan. Scrape them up over medium heat until you have a little sauce; season to taste.
- Quarter the duck and serve with the pan sauce, with spring onions scattered over.
