450 g monkfish fillet
8 lemon grass stalks
30 ml fresh lemon juice
15 ml olive oil
15 ml finely chopped fresh coriander
2.5 ml salt
Large pinch of ground black pepper
!2 large scallops, halved crossways
a few fresh coriander to garnish
rice, to serve


 

  • Remove any membrane from the monkfish, then cut into 16 chunks.
  • Remove the outer leaves from the lemon grass to leave thin rigid stalks. Chopped tender parts of the lemon grass leaves and place finely and place in a bowl. Stir the lemon juice, oil, chopped coriander, salt and pepper.
  • Thread the fish and scallop chunks alternately on to the 8 lemon grass stalks. Arrange the skewers of the fish and shell fish in a shallow dish and pour over the marinade.
  •  Cover and live in a cool place for 1 hour, turning occasionally.
    Transfer the skewers to a heatproof dish or a bamboo steamer, cover and steam over boiling water for 10 minutes until just cooked. Garnish with coriander and serve with rice and the cooking juice poured over.
