Crispy Chicken Cutlet s Recipe

6 chicken cutlets
Salt
Pepper to taste
8 oz mayonnaise
1/2 teaspoon pure lemon oil or 2 fl oz fresh lemon juice
2 garlic cloves, minced
2 spring onion chopped, including the firm green
Several sprigs fresh thyme, leaves only

 

Salt the cutlets lightly and rub the salt in on both sides. In a small bowl mix together the remaining ingredients. Spread the flavored mayonnaise over the chicken, coating both sides, and let it marinate for 2 hours.
Preheat the oven to 180 deg C. Put the cutlets on a fold - lined baking sheet and bake for 20-30 minutes until the outside is golden brown and crispy. If they are not crispy, run them under the grill.
