Chicken with Red Peppers

3 tablespoons olive oil

4 chicken thighs

2 boneless chicken breasts, cut in half crosswise

Salt and pepper to taste

6 garlic cloves, chopped

1 medium onion, chopped

1 thick slice bacon, diced

2 red sweet peppers, seeded and chopped

1 bay leaf

1 teaspoon dried thyme

1 (14 oz) can diced tomatoes, including juice, or 1 lb skinned, seeded and chopped tomatoes

Chopped parsley

  • Heat the oil in a heavy pot, such as a Dutch oven. When it' s hot, add half of the chicken pieces and fry over medium heat until they begin to color.
  •  Remove the cooked chicken and brown the remaining pieces. Add salt and pepper. Add the onion and garlic and cook until they begin to color. 
  • Add the cooked chicken to the pot along with the bacon, peppers, bay leaf and thyme. 
  • Fry until the bacon begins to color, then add the tomatoes and let it all bubble. 
  • Stir everything together, turn the heat down to low. cover and simmer for an hour or longer, until the juice is reduced to a sauce. If this hasn't happened after an hour and a half, remove the chicken and turn the heat up to thicken the sauce. 
  • Check the seasoning, remove the bay leaves and serve hot, sprinkled with parsley.
