350 g skinless chicken breast fillets
1.5 ml salt
Pinch of ground white pepper
15 ml dry sherry
300 ml chicken stock
15 ml vegetables oil
1 garlic clove, finely chopped
1 small carrot, cut into cubes
1/2 cucumber about 75 g cut into 1 cm cubes
50 g drained canned, bamboo shoots, cut into 1 cm cubes
5 ml corn flour
15 ml light soy sauce
5 ml caster sugar
25 g dry roasted cashew nuts
2.5 ml sesame oil
noodles, to serve
- Cut the chicken breast fillets into 2 cm cubes. Place the chicken cubes in a bowl, stir in the salt, pepper and sherry, cover and marinate for at least 15 minutes.
- Bring the stock to a boil in a large saucepan. Add the chicken and cook, stirring for 3 minutes. Drain, reserving 90 ml of the stock, set aside.
- Heat the vegetable oil in a non stick frying pan until very hot, add the garlic and stir fry for a few seconds. Add the carrot, cucumber and bamboo shoots, and continue to stir- fry over a medium heat for 2 minutes.
- Stir in the chicken and reserve stock. Mix the corn flour with the soy sauce and sugar, and add the mixture to the pan. Cook, stirring, until the sauce is thickens slightly. Finally, add the cashew nuts and the sesame oil. Toss to mix thoroughly, then serve with noodles.
