15 ml oil

60 ml soy sauce

30 ml/ 2 tbsp mirin or medium dry sherry

15 ml soft light brown sugar

15 ml ginger juice

1 garlic cloves, crushed

500 g rump steak, about 2.5 cm thick in 1 piece

Sansho pepper

1 mooli peeled

30 ml wasabi paste and fresh coriander sprigs to garnish

  1. Mix the oil, soy sauce, mirin or sherry, sugar, ginger juice and garlic in a large shallow dish. Add the steak and turn to coat both sides. Leave in a cool place to marinate at least 2 hours, turning from time to time.
  2. Preheat a grill, ridged cast- iron grill pan or barbecue, and grill the steak for 3-5 minutes on each side. Season with sansho pepper.
  3. To prepare the Japanese style garnish, grate the mooli and squeeze out as much liquid as possible. Place a little grated pile of mooli, with 7.5 ml of wasabi paste and a coriander sprigs on each of 4 plates.
  4. With a sharp knife, slice the steak into thin diagonal slices and arrange on the plates with the garnish.
