Smoked Trout on Watercress Recipe

2 smoked trout
2 bunches watercress, washed, spun dry, and heavy stems removed

Atkins Dressing
1 shallot, minced
 1/2 teaspoon salt
2 tablespoons fresh lime juice
Minced zest of half a lemon
6 tablespoons light olive oil
1 teaspoon Dijon mustard
 Two teaspoons double cream
Salt and pepper to taste

  • Take the trout flesh off the bony frame and pull it into chevron shapes where it breaks naturally. Set aside. Tear the watercress into bite-size sprigs and set aside in a large bowl.
  • Make the dressing; In a screw- top jar, mix the shallot with the salt and lemon juice and set aside for15 minutes to half an  hour.
    When ready to serve, add the remaining dressing ingredients to the jar and shake well. Taste for seasoning, then pour over the watercress. Toss well and arrange the salad on serving plates. Arrange the trout pieces on top and serve immediately.
