Yellow Tomato and Orange Pepper Salsa Recipe

4 yellow tomatoes
1 orange pepper
4 spring onions, plus extra to garnish
Handful of fresh coriander leaves
Juice of 1 lime
Salt and freshly ground black pepper
- Halve the tomatoes and scoop out the seeds, using a teaspoon, and discard. Finely chopped the flesh.
- Spear the pepper on a metal fork and turn it in a gas flame for 1-2 minutes until the skin blisters, or place it under a hot grill and turn frequently.
- Peel off and discard the skin. Remove the core and scrape out the chop the flesh.
- Finely chop the spring onions and coriander, then mix both with the pepper and coriander and tomato flesh.
- Squeeze over the lime juice and add salt and pepper to taste. Toss well to mix. Finally, transfer the prepared salsa to the serving bowl and chill until you are ready to serve. Garnish with a few fine shreds of spring onions
