Carb 8.1g450 g potatoes
115 g plain flour, sifted
30 ml tbsp olive oil
30 ml snipped chives
Salt and freshly ground black pepper
Low fat spread, for topping
- Cook the potatoes in a saucepan of boiling water for 20 minutes, then drain. Return the potatoes to a clean pan and mash them. Preheat a griddle or heavy-based frying pan.
- Add the flour, the olive oil and the chives to mashed potato in the pan, and season with a little salt and pepper. Mix to a soft dough
- Roll out the prepared dough on a well-floured surface to a thickness of about 5 mm and stump out rounds with a 5 cm plain pastry cutter. Lightly grease the griddle or heavy- based frying pan.
- Cook the potato scone, in batches, on a hot griddle or a frying pan for about 10 minutes. Using a metal spatula, turn each potato scone once, cooking until they are golden brown on both sides. Keep the heat low and do not allow them to burn. Top the potato scone with a little low fat spread, if you like, and serve them immediately, while they still piping hot.
