4 eggs, beaten
60 ml skimmed milk
15 ml olive oil
30 ml grated reduced-fat cheddar cheese( optional)
Salt and freshly ground black pepper
- Grate the carrot and courgette. In a clean bowl, whisk together the eggs, milk and seasoning.
- Preheat the grill. Heat the olive oil in a small non-stick frying pan. Add the grated carrot and courgette, and cook the vegetables over a medium heat, stirring occasionally for 2-3 minutes.
- Pour in the egg mixture, then sprinkle over the cheese, if using, and cook for a further 4 minutes or until the base is just set. Transfer to the grill and cook for a further 4 minutes or until just firm to touch.
